Delicious BBQ Chicken Burrito Bowls Recipe

BBQ Chicken Burrito Bowls RecipeBasically all of my favorite things, in a perfectly portioned bowl! Great for #FoodPrep or a quick meal anytime!BBQ Chicken Burrito Bowls IngredientsMakes 2 servings/bowls
Ingredients:

  • 1 cup cooked brown rice
  • 1 jalapeno, sliced
  • 1/2 cup organic corn
  • 1/2 cup black beans
  • a few leaves of crisp romaine lettuce

BBQ Chicken:

  • 2 chicken breasts
  • 1.5 Tbsps BBQ seasoning
  • 1 fresh garlic clove, minced
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 Tbsp avocado oil, or olive oil

Pico De Gallo:

  • 2-3 Roma tomatoes, diced
  • 1/4 cup chopped fresh cilantro leaves
  • 2 Tbsp fresh lime juice
  • 1 small red onion, diced
  • 1/2 tsp sea salt

Clean Eating BBQ Chicken Burrito BowlsInstructions:

  1. In a medium bowl, add all BBQ chicken ingredients and toss to combine.
  2. Let marinate for about 15 min.
  3. Meanwhile, cook rice according to package directions and prepare pico de gallo.
  4. Preheat a skillet over med-hi heat.
  5. Once hot, add 1 Tbsp of oil and the chicken.
  6. Cook for about 8-10 min, flipping once halfway through.
  7. Add all desired ingredients to each bowl equally, and enjoy!
  8. Excellent for #FoodPrep too!
