Chicken Cobb Salad
- 1/3 cup extra virgin olive oil
- 4 Tbsp apple cider vinegar
- 2 tsp fresh lemon juice
- 1/2 tsp dry mustard
- 1/2 tsp raw honey optional
- 1/2 tsp minced garlic
- pinch of sea salt and fresh ground pepper
Cobb Salad for 4
- 4 small chicken breasts (I seasoned with no-salt organic seasonings black pepper, & fresh lemon while cooking.
- 6 cups fresh spring greens
- pinch of feta or blue cheese Crumbles for each plate
- 4 strips nitrate-free bacon crumbled {I use the brand Applegate.}
- 2 hard boiled eggs cut into quarters
- 4 organic Roma tomatoes quartered
- 1 large cucumber sliced
- 1 avocado sliced
