This was one of my original recipe posts when I started the Clean Food Crush website. It’s a lighter version of a classic chicken cobb salad that’s perfect for lunch, or dinner. It contains plenty of protein and veggies dressed with a light vinaigrette to help fuel your day.

Classic Chicken Cobb Salad
Ingredients
Vinaigrette Ingredients:
- 1/3 cup extra virgin olive oil
- 4 Tbsp apple cider vinegar
- 2 tsp fresh lemon juice
- 1/2 tsp dry mustard
- 1/2 tsp raw honey, optional
- 1/2 tsp minced garlic
- pinch of sea salt and fresh ground pepper
Cobb Salad Ingredients:
- 4 cups chicken breast, chopped (I seasoned with no-salt organic seasonings)
- 6 cups fresh spring greens
- 1 tbsp feta or blue cheese Crumbles
- 8 tbsp nitrate-free bacon, crumbled {I use the brand Applegate.}
- 2 hard boiled eggs, cut into quarters
- 4 Roma tomatoes, organic, quartered
- 1 cup cucumber, sliced
- 1 cup avocado, sliced
Instructions
- Make the vinaigrette by mixing all of the vinaigrette ingredients together in a bowl, then set aside.
- Layer the bottom of a bowl with lettuce.
- Top the bed of lettuce with the remaining ingredients.
- Drizzle the vinaigrette over everything and enjoy!

Recipe Variations
- Feel free to use any type of protein on this salad. Salmon, tofu, or even chickpeas all work well.
- Adjust the vinaigrette to your liking by increasing or decreasing the vinegar and sweetener.

Can I make this cobb salad ahead of time?
Yes, this is a great salad for meal prep, I just recommend that you don’t add the dressing until right before eating.
How long will this classic cobb salad stay good?
Typically this classic cobb will last about 2 days in the refrigerator since the avocado will start to go bad. If you want, you can add the avocado right before eating and the salad will last about 4 days in the refrigerator.
What makes a classic cobb salad?
A classic chicken cobb salad normally contains meat, eggs, and cheese to start with, and then you can really add any additional ingredients you want after that.
