Chickpea + Tomato + Avocado Salad Recipe
Ingredients

chickpeas
rinsed well and drained

grape or cherry tomatoes
halved

finely sliced green onion

finely chopped flat-leaf parsley

small avocados
peeled, pitted and diced

yellow sweet pepper
diced

pomegranate seeds
Dressing:

extra virgin olive oil

fresh lemon juice

clove
fresh garlic
minced
sea salt and black pepper
to taste
Instructions
In a medium mixing bowl, whisk together olive oil, lemon juice and garlic.
Season with salt and pepper to taste.
Stir in chickpea, tomatoes, pomegranate pepper, green onion and parsley.
Add avocado; toss gently and enjoy!
