Classic Chicken Cobb Salad

Ingredients 

Vinaigrette Ingredients:

  • 1/3 cup extra virgin olive oil
  • 4 Tbsp apple cider vinegar
  • 2 tsp fresh lemon juice
  • 1/2 tsp dry mustard
  • 1/2 tsp raw honey, optional
  • 1/2 tsp minced garlic
  • pinch of sea salt and fresh ground pepper

Cobb Salad Ingredients:

  • 4 cups chicken breast, chopped (I seasoned with no-salt organic seasonings)
  • 6 cups fresh spring greens
  • 1 tbsp feta or blue cheese Crumbles
  • 8 tbsp nitrate-free bacon, crumbled ‪{I use the brand ‎Applegate‬.}
  • 2 hard boiled eggs, cut into quarters
  • 4 Roma tomatoes, organic, quartered
  • 1 cup cucumber, sliced
  • 1 cup avocado, sliced

Instructions 

  • Make the vinaigrette by mixing all of the vinaigrette ingredients together in a bowl, then set aside.
  • Layer the bottom of a bowl with lettuce.
  • Top the bed of lettuce with the remaining ingredients.
  • Drizzle the vinaigrette over everything and enjoy!
