Crockpot Chicken in Tomato Caper Sauce

Ingredients 

  • 2.5 lbs. boneless, skinless chicken breasts
  • 1 Tbsp Italian seasoning
  • 1 Tbsp smoked paprika
  • 1/4 cup capers
  • 3-4 fresh garlic cloves, minced
  • 1/4 cup balsamic vinegar
  • sea salt and freshly ground black pepper, to taste about 1/2 tsp. each
  • 1 sweet yellow onion, thinly sliced
  • 15 ounce jar diced tomatoes with juice
  • 1.5 cups low-sodium or homemade chicken bone broth/stock
  • a handful of fresh parsley, chopped

Instructions 

  • Place all the ingredients except parsley inside the bowl of a 7qt slow cooker.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • Once cooked, shred the chicken in large pieces using 2 forks, or a kitchenAid mixer.
  • Sprinkle with chopped fresh parsley and enjoy!
  • Stays good in the fridge in a sealed container for about 4 days.
