Place the quinoa in a medium saucepan. Cover with cold water (measuring on package) and add a tsp of sea salt.
Bring to the boil and simmer for about 12- 15 minutes until tender.
Place kale in a large bowl. Add oil, honey, lime juice, garlic and season with sea salt and pepper to your taste.
Massage kale using your hands for a couple of minutes.
Add in quinoa, pomegranate seeds, avocado and eggs.
Toss gently to combine and enjoy!
