Egg, Quinoa + Kale Salad Recipe

Ingredients

  • 1/2 cup quinoa rinsed well in cold water
  • 6 oz. kale leaves any tough stems removed
  • 3 large free range eggs boiled to your liking
  • 1 ripe avocado skin & stone removed, sliced
  • 1/4 cup fresh pomegranate seeds
  • 1 Tbsp olive or avocado oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp raw honey
  • 1 small garlic clove minced

Instructions

  • Place the quinoa in a medium saucepan. Cover with cold water (measuring on package) and add a tsp of sea salt.
  • Bring to the boil and simmer for about 12- 15 minutes until tender.
  • Place kale in a large bowl. Add oil, honey, lime juice, garlic and season with sea salt and pepper to your taste.
  • Massage kale using your hands for a couple of minutes.
  • Add in quinoa, pomegranate seeds, avocado and eggs.
  • Toss gently to combine and enjoy!
