Fresh Summertime Italian Chopped Salad Recipe

Ingredients 

  • 2 medium avocados, diced
  • 2 English cucumbers, sliced evenly
  • 6 tomatoes on vine, sliced
  • 1 medium red onion, sliced
  • 1 cup mozzarella pearls
  • 2 Tbsp extra virgin olive oil, or avocado oil
  • 3-4 Tbsp fresh lemon juice
  • 1 Tbsp dry Italian seasoning
  • sea salt and pepper, to your taste
  • Fresh dill weed, or parsley for garnish

Instructions 

  • Whisk oil, lemon juice, and Italian seasonings in a small glass bowl to make a dressing.
  • In a separate large bowl, gently add all the chopped veggies, and mozzarella.
  • Drizzle with the dressing, season with sea salt and pepper, then gently toss.
  • Garnish with fresh dill or parsley.
