Ingredients:

  • 2 medium avocados, diced
  • 2 English cucumbers, sliced evenly
  • 6 tomatoes on vine, sliced
  • 1 medium red onion, sliced
  • 1 cup mozzarella pearls
  • 2 Tbsp extra virgin olive oil, or avocado oil
  • 3-4 Tbsp fresh lemon juice
  • 1 Tbsp dry Italian seasoning
  • sea salt and pepper, to your taste 
  • Fresh dill weed, or parsley for garnish

  1. Whisk oil, lemon juice, and Italian seasonings in a small glass bowl to make a dressing.
  2. In a separate large bowl, gently add all the chopped veggies, and mozzarella.
  3. Drizzle with the dressing, season with sea salt and pepper, then gently toss.
  4. Garnish with fresh dill or parsley.
