Fresh Summertime Italian Chopped Salad
Just. Can’t. Get. Enough. Could eat THIS everyday – all Summer long!

Makes 6 servings
- 2 medium avocados, diced
- 2 English cucumbers, sliced evenly
- 6 tomatoes on vine, sliced
- 1 medium red onion, sliced
- 1 cup mozzarella pearls
- 2 Tbsp extra virgin olive oil, or avocado oil
- 3-4 Tbsp fresh lemon juice
- 1 Tbsp dry Italian seasoning
- sea salt and pepper, to your taste
- Fresh dill weed, or parsley for garnish
