Fresh Summertime Zucchini Caprese Recipe
Ingredients
1.5
cups
of fresh
medium red tomatoes on the vine, cut into quarters
1
cup
yellow cherry tomatoes
cut in half
2
medium
fresh crisp zucchini, shaved into ribbons, I use a mandolin or spiralizer
1
cup
mozzarella pearls
drained
2
Tbsps
extra virgin olive oil
2
Tbsps
high quality balsamic vinegar
1/2
tsp
dried basil
or a handful of fresh basil leaves, chopped
sea salt & freshly cracked black pepper
to your taste
Instructions
Arrange all the vegetables and cheese on a serving dish, sprinkle over dried basil, the sea salt and black pepper.
Pour over oil and vinegar, then toss gently to combine.
Enjoy!
