Frozen Banana Pops

Ingredients

  • 5 bananas
  • 2 Tbsps coconut oil
  • 1.5 cups high quality dark or semi-sweet chocolate chips

Topping Ideas:

  • Chopped nuts such as cashews peanuts, almonds, pistachios, coconut flakes, chia, or poppy seeds.

Instructions

  • Cut the bananas in half and insert a popsicle stick into each one on the cut side.
  • Place them on a tray and freeze for 1-2 hours.
  • In a small pan on the stove top, or using the microwave, melt the chocolate and coconut oil together. Whisk well to combine.
  • Dip frozen bananas in the melted chocolate using a spoon to evenly coat.
  • Immediately sprinkle with toppings of choice, then freeze again for 30 min.
