Grated Egg + Avocado Toast for the Perfect Quick & Clean Protein Snack!

Ingredients

  • 4 hard boiled eggs peeled and grated/diced small
  • 1/4 cup crumbled cheese optional
  • 1 ripe avocado
  • 1/4 tsp ground cumin
  • 1 Tbsp fresh lime juice
  • 1 cup quartered fresh cherry tomatoes
  • 4 slices of rye or Ezekiel bread lightly toasted
  • sea salt and freshly ground black pepper

Instructions

  • In a small bowl smash the avocado with the back of a fork.
  • Season with sea salt, pepper, and add in cumin and lime juice. Stir well to combine.
  • Spread the avocado mixture equally over slices of bread, then top with grated eggs, crumbled cheese and cherry tomatoes.
  • Season with a pinch of sea salt and freshly ground black pepper.
