This combo makes an EXCELLENT start or snack idea for your busy day!

Clean Grated Egg Avocado Toast RecipeMakes 2 servings

Ingredients:

  • 4 hard-boiled eggs, peeled and grated/diced small
  • 1/4 cup crumbled cheese (optional)
  • 1 ripe avocado
  • 1/4 tsp ground cumin
  • 1 Tbsp fresh lime juice
  • 1 cup quartered fresh cherry tomatoes
  • 4 slices of rye or Ezekiel bread, lightly toasted
  • sea salt and freshly ground black pepper

Eat Clean Grated Egg Avocado Toast

Instructions:

In a small bowl smash the avocado with the back of a fork.
