Instructions
First make your vinaigrette: add all the ingredients to a small jar and shake vigorously to combine, or whisk all dressing ingredients well in a small bowl.
Heat up your grill on medium and spray with avocado oil.
Add your sliced peaches, then grill for about 2 minutes on each side. We want them warm and juicy with nice grill marks.
To assemble your salads; add cooked quinoa, cherry tomatoes, olives, onions, jalapeño and grilled peaches, equally onto a large bowl or platter, or onto serving dishes.
Drizzle each salad with a bit of your homemade balsamic vinaigrette.
