Ham & Cheese Avocado Baked Eggs Recipe

Ingredients

  • 1 medium Avocado
  • 2 small farm fresh eggs
  • 1 slice of nitrate free ham chopped
  • 1 Tbsp shredded cheese
  • a pinch of sea salt & freshly ground pepper

Instructions

  • Preheat oven to 375 degrees f.
  • Cut the avocado in half and remove the pit.
  • With a spoon, scoop out some of the avocado so it's a bit bigger than your egg and yolk.
  • Place avocado halves, pit side up in a small baking dish.
  • Gently crack an egg inside of the avocado halves.
  • Sprinkle with chopped ham, a little cheese on top, and a pinch of salt & pepper.
  • Cook for 10-12 minutes until yolk is to your liking.
