Ham & Cheese Avocado Baked Eggs
A FUN idea great for breakfast or lunch! Just bake your eggs to your own personal liking! Makes 2 servings
- 1 medium Avocado
- 2 small farm fresh eggs
- 1 slice of nitrate free ham, chopped
- 1 Tbsp shredded cheese
- a pinch of sea salt & freshly ground pepper
Preheat oven to 375 degrees f.
Cut the avocado in half and remove the pit.
With a spoon, scoop out some of the avocado so it’s a bit bigger than your egg and yolk.
Place avocado halves, pit side up in a small baking dish.
Gently crack an egg inside of the avocado halves.
Sprinkle with chopped ham, a little cheese on top, and a pinch of salt & pepper.
Cook for 10-12 minutes until yolk is to your liking.
