Ham n’ Egg Loaded Sweet Potatoes

Ingredients

  • 3 medium sweet potatoes
  • 3 oz. turkey ham or nitrate-free, high quality ham, thin sliced
  • 6 free range eggs
  • sea salt and pepper
  • 2 Tbsp fresh chopped parsley or chives

Instructions

  • Preheat oven to 400 f. degrees.
  • Slice each potato in half, spray skins very lightly with coconut, avocado, or olive oil and place them on a baking tray lined with baking paper or foil.
  • Roast for about 20 minutes until the potatoes are softened. Let them to cool down a bit on the tray, then scoop out the insides leaving a thin layer all the way around.
  • Reserve potato for another use.
  • Fill the bottom of each skin with ham.
  • Carefully crack an egg into each skin.
  • Sprinkle with sea salt and pepper.
  • Bake at 400 degrees for 12-15 minutes or until eggs are set to your liking.
  • Remove and garnish with fresh chopped herbs.
