Healthy Ground Beef Bowl (Easy High Protein Meal!)

This healthy ground beef bowl contains well seasoned ground beef, tender roasted sweet potatoes, and a bright, freshly made pico de gallo.  Ready in under 40 minutes, this high protein beef bowl is perfect for meal prep or an easy dinner, plus the kids will love that it’s customizable.

Ingredients 

Ground Meat:

  • 1 1/2 lbs lean ground beef, or ground bison, or ground turkey
  • 3 cloves fresh garlic, minced
  • sea salt and ground pepper, to taste
  • 1 Tbsp smoked paprika
  • 1 Tbsp taco seasoning

Sweet Potatoes:

Fresh Salsa/Pico:

  • 4 large tomatoes, diced
  • 1 poblano or jalapeno pepper, seeded and diced
  • 1 red onion, diced
  • 1 bunch chopped fresh cilantro
  • juice and zest of 1 fresh lime
  • sea salt and ground pepper, to taste

Instructions 

  • Preheat your oven to 400 degrees f. and line a baking sheet with parchment paper.
  • Place your cubed sweet potatoes on your prepared sheet pan and toss with the taco seasoning and oil.
  • Arrange sweet potatoes in a single layer then roast for 25-30 minutes, tossing once halfway.
  • Make your fresh salsa by placing all of the chopped veggies, lime juice, lime zest, and cilantro in a bowl.
  • Stir gently to combine and season with sea salt and pepper to taste and set aside.
  • Meanwhile, heat a large skillet over medium heat.
  • Add the ground meat and cook while crumbling, until it starts to brown.
  • Drain any excessive grease.
  • Stir in the garlic and seasonings then cook while stirring for 4-5 minutes, more.
  • Season with sea salt & pepper to taste.
