Lacinato Kale in Smoky Garlic Sauce Recipe

Ingredients

  • 2 Tbsps avocado oil extra-virgin olive oil
  • 1 medium yellow onion diced
  • 6 fresh garlic cloves thinly sliced
  • .5 cup organic tomato sauce
  • 1.5 tsps smoked paprika
  • sea salt and freshly ground black pepper to taste
  • 1 cup broth vegetable, organic chicken, or beef
  • 2 Tbsp red wine vinegar
  • 4 3/4-pound bunches washed lacinato kale , thick stems cut out, leaves cut into thick strips (about 14 packed cups total)

Instructions

  • Place a large pot or Dutch oven over medium-high heat and add oil.
  • Once hot, add onions and garlic and stir until they begin to turn translucent, about 5 minutes.
  • Add tomato sauce and smoked paprika, broth and vinegar.
  • Reduce heat to medium and bring to a boil.
  • Add the kale, cover, and cook for a minute or two, until it begins to wilt.
  • Stir well to combine and simmer until tender, for about 25 minutes.
  • Season with sea salt and pepper if needed and enjoy!
