Low Carb Sandwich Roll-ups

Ingredients 

  • 10 chicken, turkey, or roast beef sliced deli meat
  • 5 thin slices cheese
  • 1/4 cup homemade Tzatziki sauce
  • 1 cup shredded lettuce of choice
  • 1/4 cup sliced olives of choice
  • 1-2 crisp bell peppers, mixed colors
  • 5 slices of cooked nitrate-free bacon, optional

Instructions 

  • Lay 2 slices of deli meat onto your cutting board, then top with one slice of cheese, one Tablespoon of Tzatziki, sprinkle of lettuce, olives, pepper slices and bacon.
  • Roll the "sandwich" up as shown.
  • Serve immediately or place in an airtight container and refrigerate for up to 48 hours.
