Mediterranean Cauliflower Rice Quiche is an EPIC Brunch Idea!

Ingredients

  • 1 lb. cauliflower
  • 1/3 cup sun-dried tomatoes chopped
  • 1/2 cup feta cheese
  • 20 pitted black olives sliced
  • 2 large red and yellow bell pepper chopped
  • 8 organic eggs
  • small bunch of fresh basil chopped
  • 2 fresh garlic cloves crushed
  • 1/2 Tbsp dry Italian seasoning
  • sea salt & pepper

Instructions

  • Preheat oven to 350 degrees f.
  • Grate cauliflower with the coarse side of a cheese grater so it resembles rice.
  • Heat a large skillet over medium-high heat. Once hot, add olive oil, then cauliflower, peppers, and garlic.
  • Season with sea salt and pepper to taste and add the Italian seasoning.
  • Stir fry for about 3-4 minutes to get all the veggies soft.
  • Place the stir fried veggies in a bowl. Mix in beaten eggs, feta, chopped olives, sun dried tomatoes and chopped basil. Mix until well blended.
  • Line a 23cm / 9 inch pie dish with a parchment baking sheet.
  • Pour cauliflower mixture on top. Spread evenly, tapping it down gently as much as possible.
  • Cook in the oven for 30-40 mins until golden and just set in the center.
