Preheat oven to 350 degrees f.
Grate cauliflower with the coarse side of a cheese grater so it resembles rice.
Heat a large skillet over medium-high heat. Once hot, add olive oil, then cauliflower, peppers, and garlic.
Season with sea salt and pepper to taste and add the Italian seasoning.
Stir fry for about 3-4 minutes to get all the veggies soft.
Place the stir fried veggies in a bowl. Mix in beaten eggs, feta, chopped olives, sun dried tomatoes and chopped basil. Mix until well blended.
Line a 23cm / 9 inch pie dish with a parchment baking sheet.
Pour cauliflower mixture on top. Spread evenly, tapping it down gently as much as possible.
Cook in the oven for 30-40 mins until golden and just set in the center.
