Mediterranean Cauliflower Rice QuicheSome ingredients are just made for each other! The flavors in this breakfast/brunch Quiche just melt in your mouth! It’s wayyyy simpler than it looks, so go ahead and impress your guests this weekend!Mediterranean Cauliflower Rice Quiche InstructionMakes about 4 servings 
Ingredients:

  • 1 lb. cauliflower
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup feta cheese
  • 20 pitted black olives, sliced
  • 2 large red and yellow bell pepper, chopped
  • 8 organic eggs
  • small bunch of fresh basil, chopped
  • 2 fresh garlic cloves, crushed
  • 1/2 Tbsp dry Italian seasoning
  • sea salt & pepper 

Healthy Mediterranean Cauliflower Rice Quiche RecipeInstructions:

  1. Preheat oven to 350 degrees f.
  2. Grate cauliflower with the coarse side of a cheese grater so it resembles rice.
  3. Heat a large skillet over medium-high heat. Once hot, add olive oil, then cauliflower, peppers, and garlic.
  4. Season with sea salt and pepper to taste and add the Italian seasoning.
  5. Stir fry for about 3-4 minutes to get all the veggies soft.
  6. Place the stir fried veggies in a bowl. Mix in beaten eggs, feta, chopped olives, sun dried tomatoes and chopped basil. Mix until well blended.
  7. Line a 23cm / 9 inch pie dish with a parchment baking sheet.
  8. Pour cauliflower mixture on top. Spread evenly, tapping it down gently as much as possible.
  9. Cook in the oven for 30-40 mins until golden and just set in the center.
