Overnight Oatmeal Fruit Parfaits

Ingredients

  • Parfait Ingredients:
  • 2 cups plain Greek yogurt or coconut yogurt
  • 1 cup fresh raspberries
  • 1/4 cup raw honey or pure maple syrup
  • 1 cup fresh blueberries
  • 1 cup chopped fresh mango
  • 1 cup chopped fresh pineapple
  • 2 cups prepared overnight oats recipe above
  • mint leaves for garnish
  • small pineapple wedges as garnish

Instructions

  • FIRST: you need to prepare your overnight oats (recipe above) and allow them to soak overnight.
  • Next Day: Start by prepping your fruit: chop the pineapple and mango, rinse then allow the berries to air dry completely.
  • In a small bowl, add your raspberries and honey.
  • Using a fork, mash them together into a smooth puree.
  • Divide half this puree evenly among 4 serving cups or jars, reserving half as a final topping.
  • Top each with a spoonful of overnight oats, chopped fruit, and yogurt as desired.
  • Repeat layers as desired.
  • Drizzle each equally with remaining raspberry puree, and top with a pineapple wedge and mint leaves.
  • Serve immediately and enjoy!
