FIRST: you need to prepare your overnight oats (recipe above) and allow them to soak overnight.
Next Day: Start by prepping your fruit: chop the pineapple and mango, rinse then allow the berries to air dry completely.
In a small bowl, add your raspberries and honey.
Using a fork, mash them together into a smooth puree.
Divide half this puree evenly among 4 serving cups or jars, reserving half as a final topping.
Top each with a spoonful of overnight oats, chopped fruit, and yogurt as desired.
Repeat layers as desired.
Drizzle each equally with remaining raspberry puree, and top with a pineapple wedge and mint leaves.
Serve immediately and enjoy!
