Overnight Oatmeal Fruit Parfaits 🌴🫐🍍

An ultra-refreshing and super satisfying cold breakfast for these hot summer days!

ZERO cooking! The oats soak overnight in your fridge instead of using heat, so this recipe is PERFECT to enjoy during the high heat of summer.

Lots of fresh ripe fruit and fun layers of oats and yogurt.

The finished result is absolutely beautiful and so delicious!

Not only do overnight oats save you time in the morning, but they’re also easier to digest than unsoaked oats.

As the oats soak overnight, their digestibility greatly improves.

Overnight, as they soak, the starches break down, which improves digestibility, and the natural phytic acid (which all plants contain) is greatly reduced, which makes them more easily absorbed by your body!

(And YES, they are eaten cold, just like pudding… just try it!) Enjoy!

Overnight Oats Ratio:

First you’ll need to make your overnight oats.

➡️1 cup old-fashioned rolled oats (uncooked)
➡️about 1 cup of liquid such as unsweetened nut milk or unsweetened coconut milk (sometimes a splash more if needed)
➡️ 2 Tbsps chia seeds
➡️ 1 Tbsp raw honey or pure maple syrup, or to taste
➡️1 tsp vanilla extract
➡️ Optional: protein powder for added protein

In a mixing bowl, add all of your overnight oat ingredients and stir really well to combine.

If you added protein powder, then you may need an extra splash of milk.

If they seem hard to stir and dry, add a splash more milk.

Cover and refrigerate overnight.

Next day: Give everything a good stir.

Or keep refrigerated (covered) for up to 5 days.

This should create right around 2 cups of prepared overnight oats for your Oatmeal Parfaits (recipe below).

🍯 The sweetness factor is such a PERSONAL preference, so please consider this when adding in your raw honey, or maple syrup.

Depending on your taste, you may want a bit more or less.

🧠 Everything You Need To Know About Oats:

🥛Use ANY milk of your choice. My personal preferences for these oats are unsweetened coconut milk, unsweetened almond milk, or unsweetened cashew milk.

Parfait Ingredients:

  • 2 cups plain Greek yogurt or coconut yogurt

  • 1 cup fresh raspberries

  • 1/4 cup raw honey or pure maple syrup

  • 1 cup fresh blueberries

  • 1 cup chopped fresh mango

  • 1 cup chopped fresh pineapple

  • 2 cups prepared overnight oats (recipe above)

  • mint leaves for garnish

  • small pineapple wedges as garnish

Instructions:

FIRST: you need to prepare your overnight oats (see recipe above) and allow them to soak overnight.

Next Day:
Start by prepping your fruit: chop the pineapple and mango, rinse then allow the berries to air dry completely.

In a small bowl, add your raspberries and honey. Using a fork, mash them together into a smooth puree.

Divide half this puree evenly among 4 serving cups or jars, reserving half as a final topping.

Top each with a spoonful of overnight oats, chopped fruit, and yogurt as desired.

Repeat layers as desired.

Drizzle each equally with remaining raspberry puree, and top with a pineapple wedge and mint leaves.

Serve immediately and enjoy!
