Line 2 medium baking sheets with parchment paper.
Place your prepared fruits onto the baking trays and freeze for at least 4 hours or overnight.
Transfer your frozen fruits to a food processor or high-speed blender.
Add a splash of coconut water/milk and process until smooth. Start with less liquid, then slowly add more until you get your desired consistency. You'll likely need to stop your machine a few times and using a spatula, scrape down the sides.
Transfer to serving bowls, garnish as desired and serve immediately.
