Pink Smoothie Bowls

Ingredients 

  • 4 ripe peaches, peeled and chopped small
  • 2 cups ripe strawberries, halved
  • 2 large bananas, peeled and sliced small
  • 2-3 Tbsps coconut water, coconut milk, or water
  • garnish ideas: fresh berries, sliced banana, coconut flakes, granola, chopped nuts, nut butter, chia seeds, hemp seeds, etc.

Instructions 

  • Line 2 medium baking sheets with parchment paper.
  • Place your prepared fruits onto the baking trays and freeze for at least 4 hours or overnight.
  • Transfer your frozen fruits to a food processor or high-speed blender.
  • Add a splash of coconut water/milk and process until smooth. Start with less liquid, then slowly add more until you get your desired consistency. You'll likely need to stop your machine a few times and using a spatula, scrape down the sides.
  • Transfer to serving bowls, garnish as desired and serve immediately.
