Portobello Baked Eggs Recipe

Ingredients

  • 4 portobello mushrooms stems removed
  • 4 free range eggs
  • 1 Tbsp avocado oil or olive oil
  • 5-6 cherry tomatoes cut into halves
  • fresh thyme
  • sea salt and pepper to taste

Instructions

  • Preheat the oven at 350 degrees f
  • Lightly brush avocado oil on portobellos and season.
  • Then place mushrooms stem side up on a greased baking sheet.
  • Very gently crack open the eggs and carefully place one inside each mushroom, right where the stem was.
  • Sprinkle with cherry tomatoes, thyme leaves, and sea salt & pepper to taste.
  • Bake for 15-20 minutes in your preheated oven until the eggs are cooked to your liking.
