Clean Eating Portobello Baked Eggs

Portobello Baked Eggs

A new, simple egg preparation for all the mushroom lovers in your life!Portobello Baked Eggs RecipeMakes 2-3 servings

Ingredients:

  • 4 portobello mushrooms, stems removed
  • 4 free range eggs
  • 1 Tbsp avocado oil, or olive oil
  • 5-6 cherry tomatoes, cut into halves
  • fresh thyme
  • sea salt and pepper to taste

Eat Clean Portobello Baked Eggs

Instructions:

Preheat the oven at 350 degrees f.

Lightly brush avocado oil on portobellos and season.

Then place mushrooms stem side up on a greased baking sheet.

Very gently crack open the eggs and carefully place one inside each mushroom, right where the stem was.

Sprinkle with cherry tomatoes, thyme leaves, and sea salt & pepper to taste.

Bake for 15-20 minutes in your preheated oven until the eggs are cooked to your liking.
