  • 4 portobello mushrooms, stems removed
  • 4 free range eggs
  • 1 Tbsp avocado oil, or olive oil
  • 5-6 cherry tomatoes, cut into halves
  • fresh thyme
  • sea salt and pepper to taste

Eat Clean Portobello Baked EggsInstructions:

  1. Preheat the oven at 350 degrees f
  2. Lightly brush avocado oil on portobellos and season.
  3. Then place mushrooms stem side up on a greased baking sheet.
  4. Very gently crack open the eggs and carefully place one inside each mushroom, right where the stem was.
  5. Sprinkle with cherry tomatoes, thyme leaves, and sea salt & pepper to taste.
  6. Bake for 15-20 minutes in your preheated oven until the eggs are cooked to your liking.
