Quick Turkey Taco Salads for Lunchtime + Meal Prep!

Ingredients 

Turkey Taco Meat

  • 1 Tbsp avocado oil
  • 1/2 onion, diced
  • 2 lbs organic ground turkey
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 2 Tbsp organic tomato paste
  • 1/2 cup organic bone broth or chicken stock

For Salad

  • 8 cups green leaf lettuce, or any other greens that you like
  • 4 radish, sliced
  • 1 pint of cherry or grape tomatoes, cut in half
  • 1 jalapeno, sliced
  • 1/2 cup cilantro, chopped
  • 1 lime, sliced
  • 2 avocados, sliced

Instructions 

Turkey Taco Meat

  • Add avocado oil to a skillet over medium-high heat. When hot, add in your onions and cook for 4-5 minutes.
  • Add turkey meat and break up with your wooden spoon. Let cook, stirring often for 7-8 minutes.
  • Add chili powder, cumin, oregano, garlic powder, and sea salt, stir well.
  • Add tomato paste and bone broth and stir until all is well combined.
  • Add freshly ground black pepper, and more sea salt if needed.

Salad

  • Combine lettuce, radish, tomatoes, and jalapeƱo in a large bowl.
  • Add your turkey taco meat over the top.
  • Add avocado, cilantro, and lime slices.
  • Serve with your favorite salsa.
