Roasted Parmesan Cauliflower

Ingredients 

  • 1 head cauliflower
  • 4 unpeeled garlic cloves
  • 1/2 cup grated Parmesan
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp garlic powder
  • Sea salt and freshly ground black pepper, to taste
  • 2 Tbsps olive, or avocado oil
  • 2 Tbsps chopped fresh parsley leavs

Instructions 

  • Combine parmesan & dry seasonings in small bowl, then set aside.
  • Cut cauliflower into florets; toss on a large rimmed baking sheet with 4 unpeeled garlic cloves, and oil; season with sea salt and freshly ground black pepper. Roast, tossing occasionally, for about 35 minutes.
  • Then, sprinkle with parmesan mixture, toss to combine, and roast until cauliflower is tender, 10 minutes longer.
  • Sprinkle with fresh parsley
