Roasted Parmesan Cauliflower
A DELICIOUS vegetable side dish
- 1 head cauliflower
- 4 unpeeled garlic cloves
- 1/2 cup grated Parmesan
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp garlic powder
- Sea salt and freshly ground black pepper, to taste
- 2 Tbsps olive, or avocado oil
- 2 Tbsps chopped fresh parsley leavs
Preheat oven to 425°F.
Combine parmesan & dry seasonings in small bowl, then set aside.
Cut cauliflower into florets; toss on a large rimmed baking sheet with 4 unpeeled garlic cloves, and oil; season with sea salt and freshly ground black pepper. Roast, tossing occasionally, for about 35 minutes.
Then, sprinkle with parmesan mixture, toss to combine, and roast until cauliflower is tender, 10 minutes longer.
Sprinkle with fresh parsley
