Savory Carrot Fries + Creamy Chipotle Dip

Ingredients

For the carrot fries:

  • 2 lbs carrots
  • 2 Tbsps avocado oil or olive oil
  • sea salt and ground black pepper to taste
  • 2 tsps garlic powder
  • 2 tsps smoked paprika
  • 1 tsp onion powder
  • 1 tsp cumin
  • extra parsley for sprinkling if desired

For the chipotle yogurt dip:

  • 1 cup plain Greek yogurt or coconut yogurt
  • 2 Tbsps minced fresh parsley
  • 1 Tbsp freshly-squeezed lemon juice
  • 1 tsp chipotle pepper flakes or to taste
  • 1 tsp garlic powder
  • pinch of sea salt

Instructions

  • Preheat your oven to 425 degrees f. and line a large sheet pan with parchment paper.
  • Peel, then cut the carrots into fries as shown in the video.
  • Place your carrot fries on the prepared baking sheet. Drizzle with the oil and
  • sprinkle the seasonings.
  • Toss well to evenly coat, then arrange in a single layer.
  • Roast for 15 minutes, or until golden brown, flipping once during roasting.
  • Meanwhile, in a small bowl, whisk all the chipotle yogurt dip ingredients together.
  • Sprinkle carrots with freshly chopped parsley if desired.
  • Serve your carrot fries with the chipotle yogurt dip and enjoy!
