Savory Carrot Fries + Creamy Chipotle Dip 🥕🥕🥕

A bit savory, a bit naturally sweet; THE PERFECT simple side-dish or snack idea while garden fresh carrots are plentiful at your local markets!

If you haven’t yet tried roasting your carrots, then you are definitely in for a treat!

The key to beautifully roasted carrots is to choose carrots similar in size so that they all cook at the same rate. On that same note, be sure to cut them into nice, equal, visually pleasing pieces too!

Ingredients:

For the carrot fries:

  • 2 lbs carrots
  • 2 Tbsps avocado oil or olive oil
  • sea salt and ground black pepper, to taste
  • 2 tsps garlic powder
  • 2 tsps smoked paprika
  • 1 tsp onion powder
  • 1 tsp cumin
  • extra parsley for sprinkling if desired

For the chipotle yogurt dip:

  • 1 cup plain Greek yogurt or coconut yogurt
  • 2 Tbsps minced fresh parsley
  • 1 Tbsp freshly-squeezed lemon juice
  • 1 tsp chipotle pepper flakes, or to taste
  • 1 tsp garlic powder
  • pinch of sea salt

Instructions:

Preheat your oven to 425 degrees f. and line a large sheet pan with parchment paper.

Peel, then cut the carrots into fries as shown in the video.

Place your carrot fries on the prepared baking sheet. Drizzle with the oil and sprinkle the seasonings.

Toss well to evenly coat, then arrange in a single layer.

Roast for 15 minutes, or until golden brown, flipping once during roasting.

Meanwhile, in a small bowl, whisk all the chipotle yogurt dip ingredients together.

Sprinkle carrots with freshly chopped parsley if desired.

Serve your carrot fries with the chipotle yogurt dip and enjoy!
