Silver Dollar Pancake Lunchbox (CFC Cold Lunchbox Series)

Ingredients

For each 1 lunch box you'll need:

  • 6 silver dollar pancakes
  • 2-3 slices of nitrate-free oven-roasted sliced turkey
  • 1 oz cheddar cheese cut into sticks
  • A handful of fresh raspberries or other berries
  • A few pecans or other nuts

Silver Dollar Pancakes Recipe

  • 1 large egg
  • 1 cup milk of choice I used full fat, unsweetened coconut milk
  • 2 Tbsps grass-fed butter or ghee melted and divided
  • 1 cup oat flour or finely ground oats
  • 1-1/2 tsps baking powder
  • 1/4 tsp sea salt

Instructions

  • In a large bowl add the egg together with your milk of choice, 1 Tbsp melted butter or ghee then whisk well to combine.
  • Next add in the oat flour, baking powder, and salt then whisk well until your mixture is thick and smooth.
  • Heat the remaining butter or ghee in a large skillet over medium-low heat.
  • Once the pan is hot, add 1 tablespoon of your pancake batter and cook for about a minute on each side until just golden.
  • Repeat with all the pancake mixture and let the pancakes cool for 15 minutes before assembling your lunchboxes.

To assemble your lunchbox:

  • Simply divide everything up equally as shown in the photos or as desired to fit your specific needs.
  • Stays good in the fridge for up to 2 days.
  • Enjoy!
