In a large bowl add the egg together with your milk of choice, 1 Tbsp melted butter or ghee then whisk well to combine.
Next add in the oat flour, baking powder, and salt then whisk well until your mixture is thick and smooth.
Heat the remaining butter or ghee in a large skillet over medium-low heat.
Once the pan is hot, add 1 tablespoon of your pancake batter and cook for about a minute on each side until just golden.
Repeat with all the pancake mixture and let the pancakes cool for 15 minutes before assembling your lunchboxes.
