Silver Dollar Pancake Lunchbox (CFC Cold Lunchbox Series)

Still looking for some new Lunchbox & Snack box ideas to tuck into backpacks or purses that’ll stay good for a few hours until lunchtime and do not require re-heating?

Maybe you’re heading out to the park or pool? Maybe just running errands for the day and want to avoid the drive-thru as much as possible? Maybe you need to pack something simple for the whole family?

We’ve got you covered with a few fun ideas!

You can always double up the recipes/boxes for bigger appetites or use our lunch box ideas as snacks or post-workout meals.

💡Have fun with these and make them your own depending on what’s in season and what you have on hand.

These pancakes are REALLY GOOD and full of complex carbohydrates (thanks to the oatmeal) to keep you fueled during your busy day. Add a side of protein and you’re good-to-go for a few hours!

🐄 Use ANY milk of your choice for the pancake batter. My personal preferences for these are unsweetened coconut milk or unsweetened cashew milk.

➡️ What’s my opinion on processed deli meats?

The studies are clear:

We should limit our consumption of deli meats due to many possible and/or proven health risks.

At my house, we consume deli meats about once a week or sometimes just several times per month.

They are part of our life because preparing EVERYTHING from scratch is simply not going to happen for this momma, also: we do enjoy deli meat!

For the average BUSY family that requires quick staples such as deli meats to get them through the week without grabbing fast food, what do WE look for?! Here’s my helpful list (and YES, it’s really hard to believe this much crap can be hidden and added into cold cuts!)

If possible choose deli meats containing:

  • No antibiotics

  • No nitrates: Sodium nitrate/sodium nitrite

  • No BHA (butylated hydroxyanisole)

  • No BHT (butylated hydroxytoluene)

  • No Smoked/naturally smoked/smoke flavor: could contain unlisted toxic chemicals

  • No Corn syrup

  • No Aspartame

➡️ Look for humanely raised, pasture-raised meats if possible.

➡️ Look for lower sodium.

Good luck shopping! And just so you know, I personally believe that we don’t need to obsess or be ULTRA rigid with our healthy lifestyle…I believe that it’s great to be educated, but even better not to stress over every little thing!

➡️How To Make Oat Flour

Oat flour is the simplest flour to make at home, using whole rolled oats (old-fashioned oats) and your high-speed blender or food processor.

2 cups of whole rolled oats equal about a cup of oat flour, or maybe a bit more, depending on how finely you grind it.

You may have to stop your machine and move the flour around with a spoon.

Process for at least 1 minute. You want your flour to be as finely and uniformly ground as possible.

🧈 Here’s how to make your own Ghee.

For each 1 lunch box you’ll need:

  • 6 silver dollar pancakes
  • 2-3 slices of nitrate-free oven-roasted sliced turkey
  • 1 oz cheddar cheese, cut into sticks
  • A handful of fresh raspberries or other berries
  • A few pecans or other nuts

Silver Dollar Pancakes Ingredients:

(30 small pancakes/4 servings)

  • 1 large egg
  • 1 cup milk of choice (I used full fat, unsweetened coconut milk)
  • 2 Tbsps grass-fed butter or ghee, melted and divided
  • 1 cup oat flour (or finely ground oats)
  • 1-1/2 tsps baking powder
  • 1/4 tsp sea salt


In a large bowl add the egg together with your milk of choice, 1 Tbsp melted butter or ghee then whisk well to combine.

Next add in the oat flour, baking powder, and salt then whisk well until your mixture is thick and smooth.

Heat the remaining butter or ghee in a large skillet over medium-low heat.

Once the pan is hot, add 1 tablespoon of your pancake batter and cook for about a minute on each side until just golden.

Repeat with all the pancake mixture and let the pancakes cool for 15 minutes before assembling your lunchboxes.

To assemble your lunchbox, simply divide everything up equally as shown in the photos or as desired to fit your specific needs.

Stays good in the fridge for up to 2 days.
