Tangy Sesame Cucumber Salad Recipe

Ingredients

  • 2 large English cucumbers thinly sliced, I like to leave the peel on
  • 2-3 green onions sliced
  • 2 Tbsps sesame seeds
  • 1/4 cup chopped raw peanuts

Dressing:

  • 2 Tbsp apple cider vinegar
  • 1 Tbsp water
  • 1/2 Tbsp sesame oil
  • 1 tsp raw honey
  • 1/4 to 1/2 tsp red pepper flakes
  • a pinch of sea salt

Instructions

  • In a small bowl, whisk the dressing ingredients. Refrigerate until serving.
  • Place all the remaining ingredients in a large bowl.
  • Just before serving add in the dressing and toss gently to combine. Serve immediately and enjoy!
