[VIDEO] Breakfast Fruit + Yogurt Bake

Ingredients

  • 2 cups plain Greek yogurt
  • 4 large eggs
  • 1/4 cup raw honey or pure maple syrup plus extra to serve
  • 1/2 cup oat flour or ground oats
  • 1 tsp vanilla extract
  • 1 cup mixed fresh berries plus extra fruit to garnish

Instructions

  • Preheat your oven to 350 degrees f. and lightly spray or brush an 8×8 baking dish with coconut oil cooking spray.
  • In a large mixing bowl, add the yogurt, eggs, honey, oat flour, and vanilla. Whisk until smooth.
  • Gently fold in the fresh berries.
  • Transfer the batter to your prepared baking dish.
  • I added a few extra berries to the top at this point but that's optional.
  • Bake for 35-40 minutes, or until fully set in the center.
  • Once the yogurt bake is finished baking, remove it from the oven and allow it to completely cool before slicing.
  • Serve with extra yogurt, honey, and fruit as desired.
  • Wrap leftovers tightly in plastic wrap and store in the refrigerator for up to 3 days.
