[VIDEO] Cucumber Tomato Herbed Salad

Ingredients 

  • 2 large cucumbers, small diced
  • 2 cups cherry or grape tomatoes, quartered
  • 4 green onions, chopped
  • 1/2 a bunch of fresh mint leaves, chiffonade
  • 1/2 a bunch of fresh parsley, chiffonade
  • 1/4 cup extra virgin olive oil
  • 2 Tbsps apple cider vinegar
  • 1/2 tsp sea salt, or to taste
  • 2 Tbsps sumac
  • crumbled feta cheese, optional to serve

Instructions 

  • Prepare your cucumbers, tomatoes, green onions, and herbs, as desired then add them to a large serving bowl.
  • Drizzle in the olive oil, and vinegar, sprinkle in sumac, then sea salt to your taste.
  • Add crumbled feta if desired.
  • Toss gently combine well and enjoy!
