Are you making this a long holiday weekend ahead or are you still working? I’m doing both!
Plenty of family time mixed in with some work, and also making lots of fun food for everyone!
These Protein Parfaits make THE perfect festive treat for the whole crew!
We have a really GOOD protein boost here thanks to this cottage cheese/Greek yogurt combo. Protein helps to keep everyone satisfied longer.
Blending the yogurt with cottage cheese and raw honey/lemon juice creates an ultra-creamy, whipped, decadent almost dessert-like treat!
Fresh berries keep things light, so this is perfect for summertime!
Double or triple the recipe and make it a few hours ahead for your parties.
Simply store them in the refrigerator. Best eaten within a few hours of preparing.
ðŸ‹Â ALWAYS use freshly-squeezed lemon juice from an actual fresh lemon.
Bottled lemon juice from the store will give your parfait a strange metallic or overly acidic taste. We want this to taste super bright and fresh.

Ingredients:

2 cups ripe strawberries, quartered

4 Tbsps raw honey or pure maple syrup, divided

1 Tbsp freshly squeezed lemon or lime juice

1 tsp vanilla extract

1/4 cup chia seeds

1 cup cottage cheese
-
1 cup Greek yogurt
-
2 cups blueberries
Instructions:
Slice your strawberries into quarters and place in a small saucepan.
Add in 1 tablespoon of the honey, fresh lemon juice, and vanilla, then heat the saucepan over medium heat.
Bring the mixture to a simmer then stir in the chia seeds.
Allow it to cook over low heat for 5 minutes, then set aside to cool.
Meanwhile, using a blender, blend your cottage cheese and yogurt together with the remaining 3 tablespoons of honey until smooth and creamy.
To assemble your parfait cups, layer each with the strawberry mixture, then the cheese-yogurt mixture followed by fresh blueberries as shown.
Refrigerate until ready to serve.
Best enjoyed within a few hours of preparing.
