Quick meal idea any time of the day…not just lunchtime- So pull out these ingredients when you need a QUICK dinner too!
Less than 10 minutes to a big bright bowl of deliciousness…we can’t even get delivery or take-out that fast!

🔪 Do you like chopping veggies?
I’ve always found it to be very relaxing for me. Chopping veggies forces me to slow down, calm down, and be present. It’s very soothing and the finished result always makes me feel a great sense of accomplishment that my family will be eating all those beautifully prepared fresh vegetables.
🍋 ALWAYS use freshly-squeezed lemon juice from an actual fresh lemon. Bottled lemon juice from the store will give your salad a strange metallic or overly acidic taste. We want this dressing to taste bright and fresh.
💡Want to get the most juice possible from each of your fresh lemons? Of course, we do!
Here’s a Quick Trick:
On your counter or a cutting board, press and roll the lemon back and forth very firmly with your hands.
The rolling loosens and breaks down some of the citrus membranes and makes the outside a little more pliable. This makes it easier to squeeze which also means you’ll likely get more juice from your squeeze.

What’s My Take on Processed Deli Meats?
The studies are clear:
We should limit our consumption of deli meats due to many possible and/or proven health risks.
At my house, we consume deli meats about once a week or sometimes just several times per month.
They are part of our life because preparing EVERYTHING from scratch is simply not going to happen for this momma, also: we do enjoy deli meat!
For the average BUSY family that requires quick staples such as deli meats to get them through the week without grabbing fast food, what do WE look for?! Here’s my helpful list (and
YES, it’s really hard to believe this much crap can be hidden and added into cold cuts!)
If possible choose deli meats containing:
- No antibiotics
- No nitrates: Sodium nitrate/sodium nitrite
- No BHA (butylated hydroxyanisole)
- No BHT (butylated hydroxytoluene)
- No Smoked/naturally smoked/smoke flavor: could contain unlisted toxic chemicals
- No Corn syrup
- No Aspartame
➡️ Look for humanely raised, pasture-raised meats if possible.
➡️ Look for lower sodium.
Good luck shopping! And just so you know, I personally believe that we don’t need to obsess or be ULTRA rigid with our healthy lifestyle…I believe that it’s great to be educated, but even better not to stress over every little thing!

Ingredients:
Dressing:
- 4 Tbsps homemade mayonnaise
- 1 large lemon, juiced
- 1-2 Tablespoons water to thin dressing as desired
- 1 Tbsp dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
Salad:
- 1 large head romaine lettuce, chopped
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes
- 1 large avocado, diced
- 12 ounces nitrate-free deli turkey breast
- 1 cup pitted black olives, halved
- 4 hard-boiled eggs, peeled and sliced
- freshly diced cilantro or parsley as garnish
Instructions:
In a small bowl, whisk all of your dressing ingredients together then set aside.
Quickly prepare your veggies for the salad:
Chop the romaine, thinly slice the onion, halve the tomatoes, and dice your avocado.
Place the romaine in a large bowl or equally into four separate bowls. Top with the remaining ingredients.
Roll up your sliced turkey, then slice into 1-inch pinwheels. Add to your salad as shown.
Drizzle with the dressing, sprinkle with freshly chopped parsley or cilantro, then serve.
Enjoy!
