Skillet Zucchini Margherita Pizza Bites
You’ll only need a few simple ingredients to make these tasty lil’ zucchini Margherita bites!
If you have kids or teens at home, let me nudge you to get them in the kitchen with you this weekend to make these little pizza snacks! They’re great for kids to make because they are easy & fun, but also pizza is very familiar to kids – so they’re more likely to want to try this version!
Excellent for an after-school snack or party appetizer.
🧀Cheese please:
Instead of buying pre-shredded cheese, I like to find a block of grass-fed cheese or something made locally ON SALE and shred or grate it myself….or better yet enlist one of the kids for this duty.
Many pre-grated varieties are coated in very strange things (anti-caking & clumping garbage) that actually interfere with the natural texture and melting quality.

Ingredients:
- 1/2 Tbsp avocado oil or olive oil
- 1 large zucchini, cut into 1/4-inch-thick rounds
- sea salt and freshly ground black pepper to taste
- 2 ripe tomatoes, sliced
- 1/2 cup freshly grated mozzarella cheese
- a handful of chopped fresh parsley or basil leaves to garnish
Instructions:
Preheat your oven to broil.
Heat your oil in a large oven-proof skillet over medium-high heat.
Cook your zucchini rounds until lightly golden brown, 1-2 minutes on each side, then lightly season with sea salt and pepper.
Top each round with a slice of tomato and a generous pinch of shredded mozzarella cheese.
Transfer to the oven and broil until the cheese has melted, 1 to 2 minutes.
Garnish with chopped herbs and enjoy!
