Fresh Christmas Salad with Homemade Orange Honey Dressing
It’s easy to fill up on heavy foods this time of year…they are everywhere!
It’s almost surprising when someone brings a fresh, bright salad to a Christmas party!
I dare you to surprise them!Yep, seriously. Bring your own food. If you are going to a party, or family function, then bring your own GOOD foods!Set yourself apart and show the world you CARE about what you put into your body.

You are in charge of what goes into your body!Makes about 4 servings
Ingredients:
- 6 cups baby spinach
- 1 cup pomegranate seeds, from 1 large, fresh pomegranate
- 1 large orange, peeled and sliced
- 4 celery stalks, thinly sliced
- 1/4 cup sliced almonds
For the orange dressing:
- Juice from one fresh orange
- 2 Tbsps apple cider vinegar
- 2 Tbsps olive oil
- 1 Tbsp raw honey
- 1 small shallot, minced
- sea salt and fresh ground black pepper, to taste (about 1/4 teaspoon each)
Instructions:
Combine all dressing ingredients into a small mason jar, place the lid on and shake well to emulsify. (Alternately you may whisk dressing ingredients in a small bowl)
Add all the salad ingredients nicely to a large bowl or platter, starting with spinach on the bottom and building up.
Drizzle dressing over just before serving and toss gently to combine.
