One of our FAVORITE light salads!  The ingredients will leave you feeling hydrated, and refreshed.

The salad is prepared with:

  • Fresh Baby Spinach,
  • Fresh Kale,
  • English Cucumber Slices,
  • Red Onion Slices,
  • and all natural Marinated Artichoke Hearts.

Serve with Grilled Lemon-Pepper Chicken breast for a light Lunch or Dinner.

Clean Greek Salad Dressing

THIS Salad dressing is my ABSOLUTE favorite!

Try using this dressing recipe as a marinade for your chicken breasts during the Summer! WONDERFUL!

(Makes 1/2 cup fresh Dressing):

  • 1/4 cup extra virgin olive oil
  • Juice of 2 fresh squeezed lemons
  • 2 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp sea salt
  • 1 tsp black pepper

Whisk all dressing ingredients; serve immediately. Can store in the refrigerator, sealed well for 3-4 days. Whisk again before serving.
