Gluten Free Chocolate + PB Banana Bread
Chocolate + PB Banana Bread = Nutritious HOLIDAY baking! Gluten Free – SIMPLE – smells AMAZING while baking!Makes about 10 servings
Ingredients
- 4 large ripe bananas, mashed well with a fork
- 4 eggs, at room temperature
- 1/2 cup peanut butter, or almond butter
- 1 Tbsp vanilla extract
- 1/4 cup coconut oil, melted
- 1/2 cup coconut flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 Tbsp ground cinnamon
- 1/4 tsp sea salt
- 4 oz. high quality dark chocolate chips
Instructions:
Preheat the oven to 350 degrees f. and lightly wipe a 9×5″ loaf pan with coconut oil.
In a large bowl, combine the mashed bananas, eggs, melted coconut oil, vanilla extract and nut butter until well combined.
In a separate medium bowl, whisk the coconut flour, cocoa powder, ground cinnamon, baking soda, baking powder, and sea salt together.
Add dry ingredients to the wet ingredients and mix until just combined.
Fold in the chocolate chips.
Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle a handful of chips over the top.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Remove from oven and allow to cool on a wire rack.
