Mushroom Pizza Bites
You’ll only need a few simple ingredients to make these totally DELECTABLE lil’ mushroom pizza snacks!
If you have kids or teens at home, let me nudge you to get them in the kitchen with you this weekend to make these little pizza bites! They’re great for kids to make because they are easy & fun, but also pizza is very familiar to kids – so they’re more likely to want to try this version!
🧀 Cheese please:
Instead of buying pre-shredded cheese, I like to find a block of grass-fed cheese ON SALE and shred it myself….or better yet enlist one of the kids for this duty.
Many pre-shredded varieties are coated in very strange things (anti-caking & clumping garbage) that actually interfere with the natural texture and melting quality.
🍅 Be sure to use YOUR favorite marinara sauce or good quality crushed tomatoes, because that’s where these a lot of flavor!
➡️ When shopping for store-bought sauce:
I like to make sure the marinara has no added sugar (tomatoes naturally contain sugar, but there shouldn’t be sugar on the ingredients list.)
A good marinara sauce contains just a few simple ingredients such as tomatoes, garlic, and herbs.
➡️ Try this with Rachel’s Homemade Marinara Sauce.
8 servings
Ingredients:
- 1 lb button mushrooms, roughly same size
- 1 cup pizza sauce or marinara sauce
- 1 cup shredded mozzarella cheese
- sliced nitrate-free mini pepperoni, as desired
- 2 tsps dried oregano
- 1 tsp chili flakes
- freshly chopped parsley
Instructions:
Preheat your oven to 450 degrees f. and line a large sheet pan with parchment paper.
Wipe the mushrooms with a damp paper towel or a mushroom brush and remove the stems. Place your prepared mushrooms onto the sheet pan. Season with sea salt and pepper, to taste.
Fill each with a spoonful of pizza sauce, grated cheese, and a few mini pepperonis as desired.
Sprinkle with oregano.
Bake for 15-18 minutes, or until the cheese is melted and mushrooms are tender.
Garnish with chili flakes and freshly chopped parsley.
Enjoy!
