Supreme Pizza Inspired Salad!

{This Salad is DIFFERENT & DELICIOUS, which makes it a winner!}

I needed a salad for a party today, and just started adding stuff…until this happened.

fyi: The pepperoni is Applegate brand and it’s nitrate free.

That being said, we eat pepperoni only 4-6 times per year. ☺

 Ingredients:

  • 4 English cucumbers, seeds scooped out, and chopped
  • 10 oz grape tomatoes, chopped
  • 1 small red onion, diced
  • 1 small green pepper, diced
  • 1 small red pepper, diced
  • 6 oz high-quality black olives, chopped
  • 8 oz all natural fresh mozzarella balls(optional, omit for dairy-free)
  • 4 oz nitrate free pepperoni slices
  • Fresh basil leaves , about 1/4 cup chopped

Dressing Ingredients:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine, or apple cider vinegar
  • 2 Tbsp fresh squeezed lemon juice
  • 2 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 sp sea salt
  • Fresh ground black pepper to taste {Whisk dressing, taste, adjust to personal preferences}

Instructions:

Combine all Salad ingredients gently

pour dressing over salad, & gently combine.

Cover, place in refrigerator for 1 hour before serving.
