Ultimate Summer Favorite Salad

This basic recipe is AMAZING, and it’s soooo interchangeable!

Add your favorites, use what you have, try different herbs each time…I use this recipe 2-3x per week, all Summer long!

Ultimate Summer Favorite Salad

Makes about 4- 6 servings

Ingredients:

  • 4 Roma tomatoes, seeded and diced
  • 2 cucumbers, seeded and diced
  • 1 green pepper, seeded and diced
  • 1/2 small red onion, sliced
  • 1/2 cup pitted black, or Kalamata olives (optional)
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp fresh lemon juice
  • 3-4 Tbsps Good quality olive oil, or avocado oil
  • Sea salt and freshly ground black pepper, to taste

Optional add-in ideas:

  • 4 ounces Greek feta cheese, diced
  • 1/4 cup chopped flat-leaf parsley, no stems
  • 1 Tbsp fresh chopped dill
  • 2 Tbsp fresh chopped mint leaves
  • 1 tsp sumac (Turkish) seasoning 

Instructions:

Toss all ingredients except feta cheese, gently in a large glass bowl. Let sit at room temperature for 1 hour.

Toss in the feta just before serving and taste for seasoning and adjust seasonings, as you wish.
