THE Best Pizza Zucchini Boats
These are truly the BEST!
Everyone will LOVE this Clean Eating spin on Pizza night.
Make these Pizza Zucchini Boats ASAP!
Makes about 6 servings
Instructions:
- 4 medium zucchini, halved lengthwise
- 1/2 tsp garlic salt
- 1 Tbsp olive oil
- 1 (8-oz.) jar low sugar marinara sauce
- 1 cup shredded mozzarella
- 1/4 cup mini nitrate free pepperoni
- Chopped fresh basil, or parsley, as the garnish
Ingredients:
Preheat the oven to 350 degrees f.
Use a spoon to scoop the seeds and center out of each zucchini half, leaving a ¼ inch thick zucchini boat as shown.
In a large skillet over medium heat, heat oil. Add scooped zucchini and sauté for about 2-3 minutes, then pour in marinara, stir to combine.
Place the zucchini boats in a large, rimmed baking dish cut-side up.
I like to sprinkle the zucchini boats with just a touch of garlic salt, then spoon the warmed sauce into the boats evenly, and top with mozzarella, and finally the mini pepperoni.
Bake in your preheated oven until zucchini is tender and cheese is golden, about 15 minutes.
Garnish with fresh basil, or parsley and enjoy!
