Feta & Chickpea Salad with Creamy Garlic Dressing
I was thinking very seriously about life tonight, and realized that we would all eat salads more often if we had someone to make them for us…?
Creamy Garlic Dressing {Perfect with this feta & chickpea salad}
Makes about 1 cup
Serving size is 2 tbsp
Ingredients:
- 1/2 cup extra-virgin olive oil, or avocado oil
- 1/4 cup apple cider vinegar
- 5-6 cloves garlic, crushed
- 4 Tbsp. fresh lemon juice
- 1.5 Tbsp. chopped fresh parsley
- 1 tsp. sea salt
- 2 tsp. Dijon mustard
- 1/2 Tbsp. raw honey (or pure maple syrup)
Instructions:
Place oil, vinegar, garlic, lemon juice, parsley, salt, mustard, and honey in a high powered blender or food processor. Blend until smooth.
Stir immediately before using
Store in an airtight container, refrigerated for about a week.
