Spicy Tuna Cucumber Bites
These tasty cucumber bites are perfect for entertaining, a quick lunch, or just keeping things light and tasty as far as snacking goes!
These lil’ fellas pack a BIG FLAVOR punch for such a small bite, which means they are surprisingly satisfying.
It’s fresh cucumber season! Our vines are full of fresh-crisp cucumbers this time of year! If you don’t have a home garden then be sure to visit your local Farmer’s Markets because they’re overflowing with the best tasting cucumbers throughout the late Summer months.
I really enjoy cucumbers, especially those grown in a home garden. They’re refreshing, hydrating, and ultra-crisp!
Cucumbers are just SO darn refreshing in the Summertime! And for a very GOOD reason!
Because cucumbers are composed of about 96% water, they help to keep us hydrated!💦
They contain vitamin C and other antioxidants, and nutrients that can help protect our skin from sun damage.
Bonus points!✔
Vitamin C boosts collagen and elastin, which helps to keep skin looking vibrant while natural acids found in the cucumbers protect our skin cells from UV radiation.
Cucumbers also have natural anti-inflammatory benefits and help to prevent water retention.
All things we’re especially seeking in the Summer!
So let’s load up on cucumbers during this glorious season of sunshine seeking!
Cream Cheese?
On occasion we DO ENJOY a creamy snack or meal using real cream cheese at our house. This might only happen a handful of times each year…but we sure do love it!
My favorite brand of cream cheese is pasture raised “Organic Valley.”
For this recipe I REALLY recommend using the cream cheese, but Plain Greek yogurt also works.
I haven’t tried making a dairy free version of this particular recipe, as everyone in my family does enjoy dairy here and there.

âž¡ï¸Â Try this with our Homemade Mayonnaise.

Ingredients:
- 1 or 2 large cucumbers, sliced into 1/4inch rounds
- 1/4 cup organic cream cheese, cold from the fridge
- 6 oz can tuna or salmon, drained well
- 1 jalapeño, thinly sliced
- 1 Tbsp toasted sesame seeds
- 1 Tbsp finely chopped fresh parsley or cilantro
Spicy Mayo:
- 3 Tbsps homemade mayonnaise
- 2 Tbsps hot sauce of choice
Instructions:
Lay your cucumber slices on a serving platter or board.
Spread each cucumber with about 1 teaspoon of cream cheese, a small spoonful of tuna, jalapeño slices as desired, and a tiny sprinkle of sesame seeds.
In a small bowl whisk together your mayonnaise and your favorite hot sauce really well.
Lightly drizzle this homemade spicy mayo over your tuna cucumber bites. I snipped off a teeny tiny corner of a bag then filled it with my spicy mayonnaise to get this nice even drizzle.
Garnish with finely chopped fresh herbs.
Serve immediately and enjoy!
