That’s why I’m excited to share this simple yet stunning Melon + Crispy Prosciutto Salad recipe with you!
With only a few ingredients, this salad relies on the absolute best quality components to shine. That’s why I recommend seeking out ripe garden melon, the highest-quality prosciutto, and a rich, peppery extra virgin olive oil to bring it all together.
Your guests will be ultra impressed with the beautiful presentation of this salad along with the incredible texture and flavor contrasts. The crispy, salty prosciutto gives way to the creamy mozzarella, the sweetness of the melon, and the peppery bite of the arugula. Each taste is a delight for the senses!

This salad is perfect for potlucks, picnics, or casual dinner parties. It’s light, refreshing, and easy to transport – and it’s sure to impress your guests with its elegant flavors and beautiful presentation.
Rachel’s Tips:
Since there are only a few ingredients used here, I really recommend using the absolute freshest, highest quality ingredients you can get your hands on…it really makes all the difference.
Traditional prosciutto contains no added preservatives, and the only ingredients are pork and salt.
Some cheaper prosciutto products do use nitrates as preservatives. If you want to avoid nitrates and preservatives, then look for prosciutto which has a “PDO certification” or specifically says that no nitrates or preservatives are added.
Make SURE that you actually love the taste of the olive oil that you’re using, because your salad will come out tasting very much like the oil that you use. Each olive oil has its own distinctive flavor, from very mild and buttery to an obvious peppery kick and everything in between.

Ingredients:
Dressing:
- 2 Tbsps raw apple cider vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp raw honey or pure maple syrup
- sea salt and cracked black pepper, to taste
- 2 Tbsps high quality extra virgin olive oil
Salad:
- 4 oz. high-quality sliced prosciutto
- 1 large head of Romaine, chopped
- 2 cups packed baby arugula
- 1 small cantaloupe or honeydew, small diced or balls
- 8 oz. low-moisture mozzarella, diced or mozzarella pearls
- 1/2 cup packed fresh basil leaves, chopped
- 1 bunch fresh cilantro, chopped
- 1/2 cup chopped shelled pistachios or walnuts
Instructions:
Preheat your oven to 400 degrees f.
Line a large sheet pan with parchment paper and lay the prosciutto slices without overlapping. Bake for 8-10 minutes, or just until the prosciutto is crisp, but not charred.
Meanwhile, prepare your dressing; Whisk all the dressing ingredients together in a small bowl.
Chop your Romaine lettuce then place it in a large serving bowl.
Add in the arugula, melon, mozzarella, and fresh herbs.
Drizzle your salad with the dressing and give it a gentle a toss.
Top with the crispy prosciutto, chopped pistachios, and serve.
